Easy Creme Brulee


  • 4 egg yolks
  • 10 fl oz double cream
  • 3 tablespoons of icing sugar
  • 1 teaspoon of vanilla essence
  • Castor Sugar


Beat egg yolks thoroughly

Heat cream until hot in a double saucepan (or basin over hot water)

Pour the hot cream onto the yolks, beating all the time

Return the mixture to the saucepan or basin

Add icing sugar and vanilla essence

Cook without burning, stirring all the time until the mixture thickens and coats the back of a spoon heavily

Remove from the heat and transfer into serving dishes

Chill overnight

Before serving sprinkle with the castor sugar and brulee under a preheated grill or use a chef’s blowtorch if you have one
